Hello Everyone! Today I will be sharing one of my favorite pancake recipes. I have been working on this recipe for some time, experimenting and mixing flavors until I finally found the right texture and consistency that I have been looking for. Making pancakes can be such a challenge at times, especially when it comes to the flip action. However, with practice and persistence mastering that flip will eventually come easy. Whenever I think of breakfast, I not only want it to be quick and simple but healthy. The recipe for these delicious pancakes are just that. For the next couple of weeks, I will be sharing a lot more delicious vegetarian recipes along with a few festive recipes for the season. Stay tune!
Lets take a peak at the recipe below.
Things needed:
1 Medium bowl
large spoon
Ingredients:
1 cup of flour
2 tsp baking powder
2 tbsp of sugar
1/4 tsp of ground nutmeg
1/4 tsp of ground spice or cinnamon
pinch of salt
2 tbs of canola oil or vegetable oil
1 egg ( substitute for egg - 1 tbsp of ground flaxseed with 3 tbsp of water. whisk until gelatinous and creamy) The recipe can also be done without the egg.
1 cup of almond milk or coconut milk. 1 tsp of vanilla extract or essence
Fruit Toppings (optional)
syrup (optional)
Method:
Combine flour, sugar, baking powder, salt, nutmeg and cinnamon in a bowl. Set aside.
In a separate bowl mix egg, milk, oil and vanilla essence. Add the mixture to the dry ingredients.
Stir lightly making sure all ingridients are combined.
Heat a skillet over medium heat and coat with vegetable oil.
Spoon about three tbsp of batter in skillet. Cook each side for at least one minute or until each side is golden brown.
Can be kept warm in oven or microwave until ready to serve.
Things to note:
All pancakes do not come out the same. Its okay if it looks different, the most important thing is that you get the combination correct.
Most ingredients in the pancakes can be substituted. This is a flexible recipe, so you can be creative as possible.
