Potato Stir-Fry


Hey Everyone!

In this blog post, I will be sharing another beloved recipe of mine, one I have found to be quite satisfying over the years. It is made with potatoes along with a few herbs and spices to get that perfect blend. I love a good potato stir fry. Who am I kidding? I love anything with potatoes. Although a stir-fry may look easy, it can be very difficult sometimes to find a combination of spices to blend with such a meal. Trust me, I had my fair share of bad combos. However, what I have learned through experience, is that the less spices/herbs you add the better you can identify the flavor of your meal.


As mentioned previously, the main staple in my meal is potatoes. Through research, I have found that potatoes are good for lowering your blood pressure and a good source of vitamin B6 (assist with building cells in the body and protecting the heart). They are also a good source of soluble and insoluble fiber and filled with tons of antioxidants.

Lets get to the recipe.



Recipe

3 small potatoes (peeled and diced)

1 small onion

1/2 cup chopped spinach

2 tablespoons of chopped chive

1/4 teaspoon of dried rosemary leaves

1/4 teaspoon black pepper

1/2 teaspoon of dried thyme

1/3 teaspoon of ground curry

1 teaspoon of salt or to taste

2 table spoons of oil


Process

In a large skillet, add oil. Add onions and garlic and sauté until translucent.

Add diced potatoes, rosemary, black pepper, thyme, curry and salt.

Turn down stove to low heat, cover potatoes and allow to cook for 20 mins or until tender.

Stir occasionally to prevent any burning or sticking.

Add spinach and chives and cook for another 10 mins.

Remove from heat and serve.


The potatoes can be complemented with any protein of your choice.
