Hi there everyone, today I will be sharing a soup recipe with you guys. Two main ingredients that will be used are; celery and tomatoes. I recently did some research on celery and discovered that it is filed with vitamins A, K and assist in regulating the blood sugar. It is also filled with fiber.
Let's get started!
Ingredients
For Saute
2 tbs olive oil
2 cups of celery
1 onion
2 tbs of chopped chive
half a large tomato chopped
For Base
2 cups water
2 tbs tomato paste
2 tbs of nutritional yeast
2 tbs of liquid aminos
Seasonings
1 tsp basil
1 tsp parsley
1/8 sage
1 tsp salt
For Blending
1/4 cup sour cream
2 leaves of kale
For Garnish
leaves of celery
Equipment needed
Blender
Method
Saute
In a medium sized sauce pan add olive oil, onions and chives. Cook until onions become translucent. Add tomatoes and stir for one minute. Add celery and stir for another minute.
Base
In a small bowl add two cups of water, tomato paste, nutritional yeast and liquid aminos. Mix all ingredients together and add to the saute mixture.
Remainder of recipe
At this point add all seasonings and allow to simmer on low heat for 15 minutes, stirring occasionally. Remove sauce pan from heat and allow to cool for at least 20 mins.
Add mixture to blender. Blend until combined. Pour sour cream in blender and add kale leaves. Some of the celery leaves can be added as well. Blend mixture well.
Return soup to saucepan and heat up before serving. use remaining celery leaves for garnish and serve Serves four.
