Hello Everyone and Happy Sunday!
Usually, on Sundays, I try to relax a bit and get all the outstanding chores done, but somehow it's never enough hours in the day to do everything. The one good thing about Sundays is the food. Growing up in Barbados Sundays will be the day we set aside for big meals and family time, mainly because there was no time in the week for family time. From time to time my mom would indulge us in a good soup. although I wasn't a true soup fan, she was able to hit the spot with her simple yet delicious soups.
Today I will be sharing one of my favorite soups that I enjoy at supper time. The great thing about it is that it is lightweight, creamy, and very satisfying. Let's get right to it!
Creamy Vegetable Noodle Soup
2 oz (Diameter of a quarter) of dry noodles (spaghetti, linguine, fettuccine) or 1 pack of Ramen Noodles. (do not break noodles)
2 cups of vegan protein broth or Creamy vegetable broth.
1 cup of water
2 tbsp of vegetable or canola oil
1 cup of green beans
1/2 cup of mushrooms
1 medium orange sweet potato (diced) Frozen sweet potato can be used)
1 clove of garlic (chopped)
1/3 cup of chopped white onion
1/3 tsp of ground ginger
1/4 tsp of paprika
1/4 tsp chili powder
1/4 tsp of cumin
3 tbsp of soy sauce
1 tsp of honey
1 tbsp sesame oil
salt to taste
Equipment Needed
2 medium saucepans
How To
In one of the saucepans add about 1 cup of water and bring to a boil with the vegetable or canola oil. A half teaspoon of salt can be added. Once the water has boiled add the noodles and let it cook to time.
After the noodles are cooked scoop out with tongs and set aside. In the same water add the sweet potato and let that cook until tender. Once the potatoes are almost tender, add beans to water and cook till tender. Drain and set aside.
In the second saucepan, add the mushrooms, onion, and garlic and saute for about 2 mins on medium heat.
Add 3 tbsp of soy sauce, ginger and mix vigorously for a few mins.
Add the 2 cups of broth and 1 cup of water. Stir the mixture and add paprika, chili powder, cumin, and honey. Stir well. Add salt to taste or extra soy sauce if needed.
Place some of the soup in a bowl then add noodles, beans, and sweet potato to the side.
