Today, I will be sharing a Red bean Salad recipe I created.
A salad is the one thing that we need everyday to add to our diets. I have had conversations with people who told me salads were boring and its not filling. I find that far from the truth. A good salad revolves around creativity and consistency. There are so many vegetables out there to put in a salad. It doesn't always have to be lettuce and tomato.
When creating a good salad, one should think outside the box. Allow your mind to explore all the different flavors that can be added. Also add protein based foods to give you that fullness you are looking for. For example, peas, beans, nuts or even an egg can suffice.
My salad today has beautiful red beans added to it to keep me full until my next meal. Red beans are good in maintaining cardiovascular health. It also aids in digestion, is a good source of fiber and can be useful for weight management. Some researchers have found that Red beans protects against diabetes and also cancer.
Lets take a look at the recipe below!
Recipe
1 can of Red Beans or 2 cups of cooked red beans
1 can of Whole Kernel Corn
1 Cucumber (chopped or diced)
1 tomato (chopped)
1 tsp. Olive oil
1 tsp. Grated Onion
1\2 tsp. Salt
Half of a Lemon juice
Sprinkle of Marjoram
Method
Add beans, corn, cucumber and tomato to a bowl. Stir well.
Add olive oil, grated onion, lemon juice and salt to mixture.
Sprinkle Marjoram
Mix all ingredients well in bowl and serve.
