Hello everyone!
Today's recipe will be vegetarian quiche. Quiche is a very flexible recipe, there are tons of vegetables that can be used in this dish and all types of cheese. The three vegetables I would be using in this dish are spinach, mushrooms and tomatoes. This vege combination is one of my favorites. I often use it in burritos, quesadillas and sandwiches.
Lets get started on this on this Quiche....
Ingredients:
1 cup of fresh(chopped) or frozen spinach
1/2 cup of mushrooms
1/2 cup of tomatoes
1 tbs olive oil
1 garlic clove (chopped)
1 tsp onion powder
1/2 tsp chili powder
Pinch of salt
4 eggs (beaten)
1 cup milk
1/3 cup vegetarian Parmesan cheese
1/2 cup of vegetarian mozzarella shredded cheese (or vegan cheese)
Method
Preheat oven to 350 degrees F. Add olive oil to a skillet and garlic. Stir for one minute. Take fresh chopped spinach and add to skillet. If using frozen spinach, squeeze excessive moisture out of it then place in skillet. Stir lightly or until leaves are a bit soft. Add mushrooms, onion powder and chili powder. Mix well and stir for another minute. Remove from heat and also any extra moisture accumulated.
Grease a 8-9 inch pie dish. Add spinach mixture to bottom of dish. Then place chopped tomatoes on top of the spinach mixture in pie dish. Add half of shredded cheese to mixture. The other half would be used later. Place to the side.
In a bowl add beaten eggs, milk, Parmesan cheese, other half of shredded cheese and a pinch of salt. Mix well. Pour egg mixture over vegetables in the pie dish.
Bake for 45 mins or until a little brown at the top.
